Full Time Positions

Primary Responsibilities for Managing Chef:

Responsible for pick up of product and supplies.
- Manage 2-3 staff to assist with food truck daily operations.
-Train staff in proper kitchen conduct and food handling, overseeing the sanitation and safety of the food truck.
-Menu input/feedback: work with Owner to improve menu through constant innovation.
-Adhere to all city and county regulations with regard to health and safety of food truck operations.
-Ability to drive 25 foot step van truck (driving training will be provided).
-Manage relationship with local commissary.
-Develop and improve operating procedures for the truck and commissary.
-Review budget and sales figures with Owner on a weekly basis.
-Implement and manage an inventory system for food truck and commissary.
-Represent the culinary "face" of the food truck for marketing, public relations and social media efforts.
-Deliver an experience that delights our customers and keeps them coming back.

Primary Responsibilities for Line Cook:

Daily set up and break down of mobile kitchen.
- Daily preparation and service of all food, ensuring that dishes are prepared in accordance with Keenwah, Co.’s menu and quality standards.
- Chop vegetables, prepare sauces and marinades (must have knife experience, cooking on the line, assembling dishes according to restaurant recipes and specification)
- Maintain an organized and clean work space including food prep areas, cooking and refrigeration equipment, dry storage areas and floors.
-Maintain high quality standards and presentation of product.
